Cauliflower Fried Rice: Weight Watchers Friendly!

Cauliflower Fried Rice

I recently joined Weight Watchers, and even though I love veggies, I love rice and pasta too! One of my favorite meals is salmon and rice but I did not love the fact that one cup of rice is worth 7 WW points! What’s a girl to do?!

I had made recipes using cauliflower before, such as cauliflower pizza crusts and cauliflower alfredo sauce (both are pretty darn good, by the way). So I decided to experiment and try frying the cauliflower after running it through the food processor.

Ingredients

1 head cauliflower, cut into pieces that will fit into the food processor

1 medium onion, diced

1/2 cup of chicken broth

butter flavored cooking spray

mushrooms, peas, carrots or other veggies if desired

Directions

Place cauliflower into a food processor and pulse until the mixture resembles rice.

Spray a large  skillet with cooking spray and heat over medium high heat. Saute onions until they are golden brown.

Add chicken broth and riced cauliflower. Cook until broth is absorbed and cauliflower has softened, about 3-5 minutes.  Also add mushrooms or other veggies when adding the cauliflower and broth.

Remove from heat, season to taste and enjoy!

I received much applause and appreciation when I served this to my fans, I mean, family. Even my picky teenage daughter liked it. I like to serve it with salmon or chicken but there are endless possibilities for this easy to make dish.
